Change log in timer - OS x2 on Same SSD Drive

I have Windows 7 and Windows 8.1 loaded on the same SSD drive.  When they were on separate drives, there was an option as to how long to wait before automatic log in to default OS.  With both now loaded onto the same drive, there seems to be no option.  The choices are listed in alpha-numeric order with Windows 7 of course first.   I am only given about 2-3 seconds to manually choose an OS and hit enter.  It happens so fast I really don't have time to react if I want Windows 8.1 before Windows 7 loads.  The previous screen with 2 OS systems on 2 different HDD drives (I am now using one of them now for storage) had a light blue screen with option buttons including a timer set under advanced choices.  I now have a black screen exactly like a boot choice screen (ie safe mode, regular boot etc).  I couldn't care less about the screen but how do I set the timer for say 5 or 10 seconds instead of a blur.  There is an advanced option choice using F8 but it simply shows a regular boot option screen like I mentioned above.

Can anyone give me an answer to the above in layman's terms?  I am pretty savvy about computers but I am certainly no expert.  I have a Biostar TA75A+ motherboard and the SSD is set up using UEFI GPT if that makes a difference.
